
Beet Salad and Crispy Chickpeas (Air Fryer)
Nadire’s beet salad with healthy yogurt and crispy chickpeas in the air fryer.
I normally boil the beetroot and then grate it. However, when the beets are first grated and then sautéed in olive oil in a pan, they take on a completely different flavor. Moreover, my salad was ready in a much shorter time.
While sautéing the beets, I salted them and when they cooled down a bit, I combined them with the strained yogurt with garlic. Meanwhile, I mixed the boiled chickpeas with olive oil and spices and cooked them in an air fryer for 15-20 minutes, they became crispy. you can also bake them in the oven for about 30 minutes.
When you throw crunchy chickpeas on top of a wonderful beet salad with yogurt, you will experience an explosion of flavors. You can also serve the extra chickpeas as a crunchy snack with drinks.
Ingredients
🌱 3-4medium-sized beets
🌱 250gstrained yogurt (more if you like)
🌱 1large or 2 small cloves of garlic
🌱 3Tbsp olive oil
🌱 salt, pepper
🌱 1glass of boiled chickpeas (I made 2 glasses, I gave the excess to the side of the drink)
🌱 1tablespoon olive oil
🌱 ground sweetred pepper, ground cumin, salt (more can be added after cooking if desired)
(If you are not doing it in an air fryer, you can also season, oil and bake on greaseproof paper in the oven)
I grated the beets raw, put them in a pre heated pan with olive oil, stirring occasionally and cooking them untill tender (it takes 15-20 minutes to cook)
Meanwhile, I mixed the boiled chickpeas with oil, spices and salt in a bowl. The chickpeas should not be mushy (do not cook with baking soda). I pre heated the air fryer at 180 degrees for 2 minutes, turned it to 180 degrees for 20 minutes and threw the chickpeas in. I cooked it for 15-20 minutes, shaking the pan occasionally, and seasoned ithem with more salt and pepper. Meanwhile, I mixed the yogurt with garlic and a pinch of salt. After the beets had cooled for 10 minutes, I mixed them with yogurt in a bowl, being careful not to add the juice produced. After placing the beetroot with yogurt on the plate, I drizzled good quality olive oil on it and put the crispy chickpeas on top and served 👍🏻
